Kale chips..
are AMAZING- and good for you. I first heard of them on one of the blogs I follow (can't remember which one) and thought they sounded pretty good. I forgot all about them until the other day while in the grocery store with Kevin and the kids. So, I picked up a bunch. Tonight while the kids were getting ready for bed I decided to make it.. I rinsed the kale off, and then ripped it into bite size pieces. I put all of the pieces into a mixing bowl, and then drizzled EVOO on top and mixed by hand to make sure all pieces were evenly coated. I then put some season all and black pepper and laid them out on a cookie sheet (covered in parchment paper for easy clean up) I baked them at 350 for 10ish minutes.. you can tell when they are getting close to done.. they will crunch. Be careful.. they will burn if you don't check them regularly (the burnt ones weren't that bad- and now I know for next time to make the sizes more uniform). Anyway, they crunch like a chip and are good for you. Try them out.
Day Twentyseven: My day job verses my passion
My day job: I work loss prevention at a local retail store. I like it alright, I enjoy the atmosphere and the people. I don't really like following people on the floor because I'm not really any good at it. Although I'm hoping to get better.
My passion: My passion is my children. I would love nothing more than to be a stay at home Mom again. I miss days of waking up early and doing arts and crafts in the kitchen, going for a long walk to the park and spending every minute of my day with my 2 beautiful children. I was blessed to have been able to be a stay at home Mom for 3 years.. and hopefully soon I will be able to again.

Day Twentyfive: What I would find in your bag
In my bag.. well, I suppose it really depends on who I am with. If it's just me, you will find my wallet, taser, misc. receipts, chapstick, cell phone, hair tie and keys. If I have the kids with me, you will find all of the above plus a few diapers, wipes, cups, instant kool-aid packs and a couple of toys.

Day Twentyfour: Post your favorite quote or verse of scripture and why
This one was easy- right away when I saw the topic I knew what I was going to write..
"Trust in the LORD with all your heart, And lean not on your own understanding; In all your ways acknowledge Him, And He shall direct your paths." (Proverbs 3:5-6)
I know sometimes I doubt, and feel like there is too much on my plate.. but then I remember this and feel better. I KNOW the Lord has a plan for me, and for my family. I just need to trust that everything will work out.

Day Twenty: Write a letter to someone
Dear Hannah and Grahm,
Please Please Please go to bed! It's 10:00 on Monday night, and I am so thankful I don't have to work tomorrow. I wanted to watch a movie with daddy tonight, but I know if I stay up too late I will be tired when you guys wake me up tomorrow morning. Goodnight!
Love,
Mommy

Day nineteen: Write about a sweet memory from your past
Aww.. which one to choose from? I have tons of "sweet memories"
The one that sticks out the most was when Kevin and I first kissed. We were at a party/kick back at Dos's house.. and decided to go outside to look at stars (yes, we are that corny). We sat on the couch that was on the back porch, and somehow the conversation turned to "what would you do if someone tried to rob you?"- or something like that. I said I didn't know, and Kevin said "I'll show you what I'd do, make your hand like a gun" (cute right?) So, I did and he grabbed my hand and twisted it (holy crap did that hurt) I said "oww!" and then he turned and kissed me. Yes, we were drunk.. he asked me to hang out again, and I am glad I said yes. We've been together going on 10 years now.

Day eighteen: Plans/dreams/goals you have
There are soo many plans/dreams/goals that I have. I would LOVE to buy a house in the near future (a small one will work- big enough got Kevin, Hannah, Grahm, me and some crafty stuff). I want to publish my poetry book. I want to buy a NICE car.. and I want to go back to school.
I plan on going back to school within the next year (when Kevin starts working again), and then buying a car soon after that. We are hoping to buy a house before the kids start kindergarten- and get my book published when they are in school (I am counting on ME time).

Day Seventeen: Someone you would want to switch lives with for one day and why
This one is kinda hard.. I think I might like to switch places with one of my kids for the day. I would like to see my/our parenting from their prospective. My kids are so imaginative and smart.. this would be fun for sure.

Hannah's "Diva Minnie Mouse" Room
As some of you know Hannah got a full size bed last year, and when I asked her to pick out the theme of her room she picked pink cheeta and pink, black and white zebra. This year she told me she really wanted a "Minnie Room" and that we just had to make it work out.. so, I searched the internet for something that might work for us- I found NOTHING. After searching Ebay on a whim, I found a guy that made vinyl Minnie Mouse heads, and e-mailed asking about adding a zebra bow instead of the traditional polka dot. I asked, and he delivered.. for only $10 I got 4 of them!
This is what her room looks like now:

Day Sixteen: A picture of yourself
Valentines Day.
Valentines Day came and went. My Mom came over and watched the kids so Kevin and I could go out to lunch and do a little shopping. We went to GK Mongolian BBQ, then to the furnature store and got a kick ass sectional. Then we drove around to 3 different stores looking at guns for me (yes ME, you read that right). I ended up picking out a 22 long rifle- yes, I know it's small but we already have bigger ones. The kids can learn on this also. We also picked up a gun case. All in all a pretty awesome day. When we came home we hung out with our perfect little kids and ate some treats that Grandma left for all of us, then I took a nap. When I woke up it was dinner in bed. My husband is AMAZING- most def. looking forward to the next 100 years =)
Day Fifteen: Put your ipod on shuffle: first 10 songs that play

Day Thirteen: your 5 favorite books and why
I hate to admit I am NOT a big reader.. I feel like there isn't enough time in my day to sit and read more than an article in a magazine, or a recipe in a cookbook. However, when I do find time to read a few of my favorites are:
1. Go Ask Alice- this book is AMAZING, I really can't tell you how many times I've read it- it never gets old to me. It's a real story (something I love) and it's not all rainbows and butterflies.
2. The Bell Jar- Ahh.. Sylvia Plath is a piece of work I tell ya.. this is a good book though.
3. The Crucible- Again, a book about real life events.. something people forget about.
4. A Pocket Book of Modern Verse- This book is HUGE, and full of poetry.. I think I've read it 100+ times.
5. Where the Sidewalk Ends- Who doesn't like Shel?

Day Ten: Songs you listen to when you are Happy, Sad, Bored, Hyped, Mad
Isn't it funny how listening to a certain song can take you back to a certain time in your life? I love music, and listen to it often.
When I'm happy I like to listen to: The Postal Service, Greenday, CCR- pretty much anything
When I'm sad I like to listen to: Mostly country music..
When I'm bored I like to listen to: Anything really
and I can't say I've ever been "hyped" infact, I'm not even sure I know what that means.

Dear Laundry..
I hate you. I wish my laundry would wash and fold itself. I feel like the last few days I have been up to my ears in clothes. Today I did all most of Grahm's stuff, and counted over 110 articles of clothing in his closet (not counting pajamas or undies). I also got rid of 3 bags of clothes that were too small for him, and put away clothes that will fit him next year. I am dreading working on Hannah's room next- that kid has tons of clothes. I guess this is what happens when you "shop" for a living. Blah!
Day Nine: Something you’re proud of in the past few days
I'm proud of my kids for being so good when I'm at work (well, not always- but most days). I'm proud of my Kevin (DH) for being so dedicated to losing weight.. I try to say I'll exercise, and just never get around to it. Overall I suppose I am just proud of my little family, they truly amaze me.

Day Eight- Short term goals for this month and why
Lets see here.. short term goals for the month:
1. Spend more time with my family (this is really a long term goal though, just feel like I'm not spending as much time since I'm working these fantastic hours)
2. Get caught up on bills
3. Save most of our tax money
4. Exercise more
not too many more I can think of. This month I'd like to buy a reliable car and trade the van in, but I'm not sure if that counts as a short term goal or not.

Day Seven: A picture of someone/something that has the biggest impact on you
Took a day off yesterday..
Remember my "I quit" post? I really feel like it sometimes. I worked on Friday from 2-10pm and then on Saturday from 10-7.. Friday I got home when my kids were sleeping, and Saturday I left before they woke up- so I didn't see them for 2 days pretty much =( Sometimes I really hate my job. Today is Super Bowl Sunday.. and I'm working again! Luckly today is my Friday.
Go Packers!

Day six: Favorite Superhero and why
"Faster than a speeding bullet! More powerful than a locomotive! Able to leap tall buildings in a single bound! Look! Up in the sky! It's a bird! It's a plane! It's Superman!"
I love Superman because he is the only one born a superhero, he didn't drink poison or get bit by a spider- he was just born a badass.

Facelift..
Just figured out how to make my own header using Picnik. I love it. These are a few of my favorite pictures of my kids.. 2 of them I hadn't seen until yesterday when Leslie (MIL) came over and let us upload them onto our computer. Hope you enjoy.
Day five: A picture of somewhere you’ve been to
Wednesday, February 2, 2011
If you're gonna quit..
give your two weeks notice. Trust me. There is nothing crappier than getting called into work because your co-worker just up and quit. Thanks buddy, I really like working 9 days in a row, and closing is just what I wanted to do with my Friday night.. I also didn't want to spend any time with my kids for the next 3 weeks while they look for someone to take your place.
Day four: A habit that you wish you didn’t have
I think I might have a few of these.. lets see..
1. Second guessing myself- I am trying so hard to work on this. I need to be able to trust my gut feelings, and do what I know is right. I spend a lot of time doubting, and re-thinking everything.
2. Nail biting- YUCK! I notice other people doing this all the time and think it looks gross, but I continue to do it. No one wants to see my yucktastic nail nubs.
3. Grinding my teeth- I only do this in my sleep, and have bough numerous mouth guards, and just wake up with the dang thing sitting on my pillow. Haha.
and finally..
4. Swearing- Thanks Loves.. (not cute) I'm working on this one also.

Day three: A picture of you as a child
Monday, January 31, 2011
Day two: The meaning behind your blog name.
Cow eyes.. just an old nickname from my Dad. He said I had great big eyes like a cow when I was little. I hadn't though about it in a long time until I was searching something about cows on "Google" and I typed in Cow, and one of the things that popped up was "cow eyes" It just made me think of my Dad.

30 Days of Blogging
I'm totally jumping on this band waggon =)
Day one: A recent picture of you, and 15 interesting things about yourself.
Well, this is the most recent one I could find.. not the best, but it will have to do.
1. My favorite thing to drink when I go out is a frozen margarita with extra salt. I sometimes will ask for extra, once a waiter even looked at me like I was nuts and said "you know all of that salt isn't good for your heart." Thanks for your 2 cents I guess, but I'm paying for drinks, not medical advice.
2. I hate driving on the freeway, and avoid it at all costs. Even if that means driving an extra hour or so out of my way.
3. I can't stand when people are late, and am always 10-15 minutes early.
4. I'm afraid of the dark.
6. I love the ocean, and wish we still lived in FL so I could take my kids to the beach everyday.
7. I don't like to have sandy feet. If we are going to the beach I will not get into the water unless there is somewhere to rinse my feet off before I get into the car.
